Chicken, Bacon, & Vegetable Fried Rice
Ingredients:
- 3 cups Jasmine rice
- 2 chicken breasts
- 5 slices of bacon
- 1 white onion
- 5 eggs
- 2 zucchinis
- 1 large carrot (or a bag of shaved carrots to be diced more easily)
- 1 red bell pepper
- green onion/scallion
- sesame oil
- soy sauce
*Swap out meat and veggies with whatever you prefer
*Bacon adds a nice crunch and using bacon grease adds flavor and crisps the chicken
Recipe:
1. Start 3 cups of rice in rice cooker
2. Dice chicken and bacon into small pieces
3. Season diced chicken and let marinate in fridge (seasoning of choice: salt, pepper, paprika, garlic powder/salt, etc.)
4. Place diced bacon in a pan and cook on medium high until crispy, stir occasionally.
5. While bacon cooks, finely dice white onion and place into a bowl
6. Finely chop all other veggies and place into another bowl (except green onion, this goes last)
7. Once bacon is done, remove from pan and place on paper towel to drain and cool off (leave bacon grease in pan)
8. Cook diced white onion in pan with bacon grease on medium high, stir occasionally
9. Once onion becomes translucent and browns on the edges, place seasoned diced chicken in with it
10. Cook on medium high until onion and chicken is crispy on edges
11. While chicken and onions cook, put sesame oil in pan with medium heat
12. Once pan and oil are hot, add all other veggies (diced carrots, zucchini, red bell pepper, etc.)
13. Cook in sesame oil until softened, stir occasionally
14. While chicken and veggies cook, crack 5 eggs and whisk thoroughly
15. When chicken and veggies are almost done turn stove to low for both
16. Using another burner, add sesame oil to a wok or large pot on medium heat
17. Once oil and pan heat up, add whisked eggs and scramble
18. Break scrambled eggs into small pieces with spatula as they cook
19. Once eggs are done, reduce heat to low and add 3 cups of cooked rice into the same wok/large pot
20. Drizzle soy sauce and sesame oil onto rice and mix all together with eggs (go light on the sesame oil but eyeball soy sauce until the rice turns a light brown)
21. Once the rice has light brown color, add all veggies, chicken, and bacon
22. Finely chop green onion and add in the whole mixture
23. Mix thoroughly
24. Serve and top each plate with, sriracha, furikake, etc. (add soy sauce to-taste)
